We're looking at a couple of releases from Lindores Abbey distillery.
Lindores Abbey Thiron 2025
Region: Lowlands

The second annual Thiron release, this Lindores Abbey single malt was matured in a combination of bourbon casks, rejuvenated red wine barriques and Thiron virgin oak casks. Bottled at natural colour and non chill filtered.
Nose
The nose opens with some buttery pastries, lemon water, artificial apple squash, alongside some barley sugars and peach juice. There's quite a lot of barley aromas, barley water, a little yeasty bread dough, along with some red grape in the background. It feels like there's a lot of aroma and flavour here, a good amount of cask influence, and the alcohol is fairly well integrated. As air gets into the dram, we notice it gets fruitier, although more of an artificial fruitiness.
Palate
The palate opens with some pastry dough, apple turnovers, cinnamon sugar, light caramel and custard flavours. It's a tad spicier than we would have expected, but it's got a really nice mouthfeel, creamy, textured and mouth coating. There's a biscuitiness too, freshly baked custard creams and a little white pepper too. Time and air brings out uncooked bread dough and some peach juice, maybe even a little mango puree.
Nose (with water)
The reduced nose has a more sour profile, sour plums, grape Schloer, with a sprinkling of light brown sugar and even a little melon now. It still has a youthful tinge to it, When we get deeper into the glass, we're met with a drier, woodier aroma, more sawdust and even something a little metallic.
Palate (with water)
The reduced palate maintains the texture, but follows the reduced nose in a drier, maltier profile - more wood, sandpaper, dry crackers, mixed in with some lighter orchard fruits, a fair bit of apple. There's also some more of those barley sugars peering through.
Conclusion
Lots and lots of cask influence here, but it hasn't totally covered up the base spirit. There's some youthfulness here, but overall it's a tasty dram - better on the palate than on the nose in our opinion.

Lindores Abbey 6yo Members Bottle Oloroso
Region: Lowlands

Price: £54.00
A 6-year-old Lindores Abbey single malt released as part of their 1494 Members series. It was matured in Oloroso sherry butts and bottled as a limited release of 1,494 bottles.
Nose
The nose opens with dark cherries, plum jam, alongside something a little charred, cask char perhaps. We're also finding something a little meaty, barbeque, pink peppercorns, alongside a little soapiness. It's fairly oloroso-forward, and feels like it's covering quite a lot of the spirit here - there's a bit of fruitier, orchard aromas peering through behind the sherry. Going back, we're getting blackcurrant cordial and raisins.
Palate
The palate opens with a nice thick texture, and a light warmth - chili chocolate, blackcurrant jam, a little blueberry too. There's more acidity now, not citrus per say but more of underripe fruits, and a little liquorice/anise appearing too. Time and air brings out some cooking milk chocolate and some spent coffee grounds.
Nose (with water)
The reduced nose begins to accentuate that meatier sherry profile, salt cured venison, with a host of different berry chutneys. The soapy note is still there unfortunately, but there's also some fresher, zingier red berries coming through too.
Palate (with water)
The reduced palate loses a lot of the texture we really enjoyed before, and brings in a bit of a pink peppercorn spice. There's all the same flavours as before, but just more muted unfortunately. We'd skip water on this one.
Conclusion
A bit of a sherry bomb, but not unbalanced. There's a great texture here, and some interesting notes, however we're not really seeing the Lindores spirit underneath. Saying that, the sherry is good quality and it's quite drinkable.

Now this feels like a more palatable price than today’s other review.
